Refried bean burritos with homemade tortillas




Gabe had a dentist appointment this morning to get a cavity filled so Anika and I ate breakfast alone this morning. We had vegan pancakes! Which are amazing and so simple. I'll do a post about them later. For now, lets talk about dinner. Anika was so hungry she wanted to eat her foot!



Dinner tonight was AMAZING! It takes a little more time to do everything by hand but it is soo worth it. Refried beans, guacamole, Spanish rice, lettuce and homemade tortillas!

Refried Beans
1 cup dry pinto beans
1/2  cup dry navy beans
1 package taco seasoning

Follow directions on beans package to cook. Drain all water. Add taco seasoning. Mash. Simple! I don't usually use navy beans but I had them and needed to use them up so I thought, why not!




Guacamole
3-4 Avocados
1/2 Onion
Lime Juice
Salt
Pepper

Chop and peel avocados. Mince onion. Combine all ingredients in a bowl and mash. Easy enough.

Spanish Rice
1 cup Brown Rice
1/2 cup Tomato Sauce
2 cups water
Olive Oil
Onion
Green Pepper

Add 1/2 cup of tomato sauce and 2 cups water to sauce pan. Bring to a boil. Add 1 cup brown rice. Simmer for about 35-40 minutes. Mince onion and green pepper, saute in olive oil. When rice is cooked add onion and pepper.





Tortillas
Recipe from here.
1 cup wheat flour
2 cups white flour
1 tsp salt
1/3 cup oil
1 cup warm water

Combine all the flour, salt, vegetable oil, and water until it forms a dough.

Roll the dough into a big ball and take about an 1 to 2 inch pieces off. Pat the dough flat with your hands or take a rolling pin and roll into circles.


Put the dough on a flat pan on the stove and let the sides cook until there are little brown specks on both sides like you would see on other tortillas.


This meal does take a little work but I think just tastes so much better when it is all handmade. Anika sure had fun helping too!




 And of course the best part about the dinner, eating it!!

  2. They are really easy! Usually I just use pinto beans. And I think you can add oil too, but in order for them to be healthier I left it out. I can't even eat refried beans from the can anymore, it just tastes like I'm eating salt.
